Crockpot Creamy Sausage Tortellini Soup

This soup y’all.…what is there not to say about this soup? It has become a sta­ple around our house dur­ing the fall months…well let’s be hon­est we could make and eat this dish year-round..it’s seri­ous­ly THAT good! 

Ingre­di­ents

  • 1 pound mild sausage 
  • 1 large box of chick­en stock
  • 1 8 oz block of cream cheese, cubed
  • 1 bag of fresh baby spinach leaves 
  • 2 cans of diced toma­toes (undrained) or fresh grape toma­toes halved 
  • 1 bag frozen cheese tortelli­ni noodles

Steps

  • Brown and drain sausage and set to the side
  • Add all ingre­di­ents, except noo­dles, to a crock pot and set on low
  • Allow soup to cook on low for about 4 hours or until the cream cheese is com­plete­ly melt­ed and creamy
  • 4. Add tortelli­ni noo­dles about 15–20 min­utes from serving 

Prep Time: 10 minutes

Cook Time: 4 Hours

Yield: 8–12
